As we gear up for Christmas I can not help but reflect on Christmas memories. One of my most frequent and prominent memories is Christmas Morning Breakfast Casserole. I have vivid memories of helping Papa make this casserole. It is a staple on our Christmas mornings. Now that I have to work some Christmas Days now I make it for work. There is not anything revolutionary or different from other breakfast casserole recipes other than the memories and love scrambled with it.
Christmas Morning Breakfast Casserole
2 cups sharp cheddar cheese
10 eggs
10 pieces of bread, crust removed
1 pound bacon, fully cooked and crumbled
1 pound ground sausage, fully cooked/drained well
1 quart milk
Preheat oven to 325 degrees. Butter a casserole dish (atleast 9×13). Place five pieced of bread in casserole dish. Add one cup cheese. Combine bacon and sausage. Add on top of cheese and bread. Beat eggs, add milk to eggs. Pour half mixture over other contents in casserole dish. Place other bread pieces on top. Top with 1 cup cheese. Pour additional egg mixture over bread/cheese. Bake at 325 degrees for around an hour. Casserole should be lightly brown on top and firm in the middle when you shake the dish. Serve warm. Enjoy!
